High-Protein, Meal-Prep Friendly Breakfast Fuel
Makes 12 Egg BitesServing: 2-3 BitesHigh Protein25 Min Prep + Bake
COACH MEGS' MORNING FUEL ROUTINE
Right now I am completely obsessed with having these Egg Bites ready to go in the fridge! Paired with Breakfast #1: a half serving of pre-workout, 1/2 banana, plus a shake made of Clear Protein + Creatine first thing in the morning. High protein, clean energy, no decision fatigue.
INGREDIENTS
THE BASE
- 8 whole eggs
- 1 cup liquid egg whites
- ½ cup low-fat cottage cheese (blended or smooth for extra protein & creaminess)
- ¼ cup unsweetened almond milk or skim milk
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper to taste
MIX-INS (CUSTOMIZABLE!)
- ½ cup cooked turkey bacon, diced chicken sausage, or ham
- ½ cup shredded light cheddar or feta cheese
- 1 cup chopped fresh spinach & diced bell peppers
DIRECTIONS
- Preheat & Prep: Preheat oven to 350°F (175°C). Generously spray a 12-cup silicone muffin tin or standard muffin pan with non-stick cooking spray.
- Blend the Base: In a blender, combine eggs, liquid egg whites, cottage cheese, milk, garlic powder, onion powder, salt, and pepper. Blend until completely smooth and frothy (about 20 seconds).
- Add Fillings: Evenly divide cooked meat, veggies, and cheese into the bottom of each muffin cup.
- Pour & Bake: Pour egg mixture over the fillings, filling each cup about ¾ full. Bake for 20–22 minutes until eggs are set in the center and lightly golden on top.
- Cool & Store: Allow to cool for 5 minutes before removing. Store in an airtight container in the fridge for up to 5 days, or freeze for up to a month! Reheat in the microwave for 30–45 seconds.
